BISCOTTI WITH ALMONDS

1 cup flour “00” type

½ cup butter room temperature

2 eggs

½ cup sugar

half tea spoon salt

half tea spoon baking powder

1/3 cup almonds

 

Mix the soft butter with the sugar, then add the flour and the eggs. Work the mixture until it becomes homogeneous, then add the salt, the backing powder and the almonds.

Preheat the oven at 350 F

In the oven pan, shape the dough into two sticks. Put in the oven for 15 minutes. Take the cookies out ad cut them in small rectangle (2 cm). Put them back in the oven for 10/15 minutes. Serve with Vin Santo wine.
